Almost Vegan Muffins

Ingredients you will need:

  • 2 cups oates
  • 2 cups almond meal
  • 3 eggs
  • 2 Tbs chia seeds
  • 1 tsp vanilla essence / extract
  • 2 bananas - mashed
  • 1 apple - peeled then grated
  • 1 pear - peeled then grated
  • zest of 1 lemon
  • juice of 1 lemon
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp nutmeg
  • 1 tsp bicarb soda
  • soy milk OR milk of your choice

Step 1: Pre-heat oven to 170 degrees celcius

Step 2: Combine all ingredients, leaving out lemon juice, bicarb soda and milk. Mix well

Step 3: Add bicarb soda and then lemon juice on top.  It will start to fizz, this is the lemon juice activating the bicarb.  This is normal and acts as the raising agent for the muffins. Mix well.

Step 4: Add milk in 1/2 cup increments stirring each time.  Continue to add milk until you have a cake batter consistency

Step 5: Line muffin tray with patty cases and fill.

Step 6: Bake for approx 20 mins or until skewer comes out clean

Note: I have sprinkled desiccated coconut on top of my muffins prior to baking
