Almost Vegan Muffins

Ingredients you will need:

  • 2 cups oates
  • 2 cups almond meal
  • 3 eggs
  • 2 Tbs chia seeds
  • 1 tsp vanilla essence / extract
  • 2 bananas - mashed
  • 1 apple - peeled then grated
  • 1 pear - peeled then grated
  • zest of 1 lemon
  • juice of 1 lemon
  • 1 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp nutmeg
  • 1 tsp bicarb soda
  • soy milk OR milk of your choice

Step 1: Pre-heat oven to 170 degrees celcius

Step 2: Combine all ingredients, leaving out lemon juice, bicarb soda and milk. Mix well

Step 3: Add bicarb soda and then lemon juice on top.  It will start to fizz, this is the lemon juice activating the bicarb.  This is normal and acts as the raising agent for the muffins. Mix well.

Step 4: Add milk in 1/2 cup increments stirring each time.  Continue to add milk until you have a cake batter consistency

Step 5: Line muffin tray with patty cases and fill.

Step 6: Bake for approx 20 mins or until skewer comes out clean

Note: I have sprinkled desiccated coconut on top of my muffins prior to baking

Chocolate Dipped Strawberries

Ingredients you will need:

  • 1 punnet strawberries
  • 100grm dark chocolate (highest cocoa percentage you can get)

Step 1: Wash strawberries and allow to dry on paper-towel

Step 2: In a microwave safe bowl, melt chocolate in 30 second increments so you don't burn the chocolate. Stir between each increment

Step 3: Line a tray with baking paper

Step 4: Pat strawberries dry one last time and dip into chocolate.  Place on lined tray and fridge.

Step 5: Once chocolate has set, transfer strawberries to container and place in freezer

*It is important to purchase the best quality chocolate you can afford as well as the highest cocoa percentage you can handle.  

To add more goodness, finely chop dry roasted almonds then roll strawberry in the nuts while the chocolate is still wet.  This is such a lovely treat for mum especially coming into Summer.  These treats won't ruin your hard work exercising or your healthy eating...too much :)

Strawberry Custard

Ingredients you will need:

  • 1 egg
  • 1 dessert spoon cornflour
  • 1/2 banana
  • 8-10 strawberries (depending on the size)
  • 400ml made up formula OR milk of your choice

Step 1: In a non-stick pot, whisk together egg and cornflour

Step 2: Wash strawberries and cut off green leaves, add to a bowl with the banana Puree with barmix until smooth

Step 3: Add made up formula/milk to egg and cornflour mix and place on stove over a medium heat

Step 4: Continue to whisk mixture until boiling

Step 5: Allow the mixture to boil until it reaches desired thickness. Remember to whisk at all times

Step 6: Pour mixture into sterilised jars and refrigerate

Mummy & Bubby Pasta Sauce

Ingredients you will need:

  • 1 avocado 
  • 1/2 bunch basil leaves (approx. 5 stems)
  • 2 Tbs olive oil
  • 1 handful raw almonds
  • 3 handfuls baby spinach leaves

Step 1:  Place almonds in food processor and blitz until fine.

Step 2:  Wilt spinach leaves in small pot with 2cm water.

Step 3:  Drain spinach and add to almonds, blitz.

Step 4:  Add the rest of the ingredients and blitz until desired consistency.  We make it as smooth as possible.

Step 5:  Best kept in Mumi & Bubi Starter Kit

Note: When you use this sauce, don't forget to keep 1 cup of pasta water before draining pasta.  Add this slowly when your creating the consistency of your sauce as this will help the sauce/other ingredients stick to the pasta.

Original Rusk Sticks

Ingredients you will need:

  • 2 1/2 cups almond meal
  • 2 Tbl coconut oil
  • 1 Tbl organic maple syrup
  • 1 tsp baking soda
  • 1 tsp nutmeg
  • 1 egg

Step 1:  Pre-heat oven to 200 degrees celsius

Step 2:  Line a baking tray with baking paper

Step 3:  Combine all ingredients except coconut oil and mix well

Step 4:  Warm coconut oil until liquified

Step 5:  Add coconut oil to combined ingredients and mix well

Step 6:  Roll balls of mixture into desired thickness and length to suit your baby

Step 7:  Bake for 15 minutes, or until dark golden brown
